Ingredients

  1. 1 kg beef pieces, cut into 1-inch cubes
  2. 2 tablespoons vegetable oil
  3. Salt and pepper (to taste)
  4. 1 onion medium size, chopped
  5. 3 garlic cloves, minced
  6. 4 carrots, thinly sliced
  7. 3 potatoes, diced into small pieces
  8. 1 cup mushroom, chopped (optional)
  9. 2 tablespoons tomato paste
  10. 4 cups beef broth
  11. Bay leave
  12. 1 tablespoon dried thyme
  13. Fresh parsley or coriander, for garnish 

How to make beef stew

  1. Season beef with salt and pepper and set aside.
  2. Add vegetable oil into a large pot, put seasoned beef into sessions, and sauté until golden brown. Remove it and set it aside.
  3. In the same pot, add garlic and onion and sauté it until softened for 3-4 minutes. Now add the vegetables (carrots, mushrooms, and potatoes), cooking for another 5-6 minutes.
  4. Return beef to the pot, add beef broth, tomato paste, bay leaf, and thyme, and bring to a boil.
  5. Adjust heat to low, cover, and let it simmer for 1.5–2 hours until beef is tender.
  6. Taste it to adjust seasoning if needed; remove Bay Leave. Serve it hot and garnished with parsley.
